Cavalli Pizzeria McKinney

I had been wanting to try this place for a while.  Had a few people (including my wife who doesn't just love pizza) how good it was.  So the wife and I ran by for lunch last week.  We ended up ordering a Caesar salad and a pizza called The Dallas. 

The menu stated that their pizza was cooked at 900' for 90 seconds.  They had an awesome looking wood burning oven.   Nice tile job on the oven.  We sat outside because it was such a nice day (since we had so much rain recently).  When I go back, I want to sit where I can watch the kitchen as they make/cook the pizza.

So our pizza came out.


So you can definitely tell the pizza was cooked at a very high degree.  A lot of char on the crust. But I love char (as long as it isn't all char). 

This pizza was awesome.  I love the taste of the crust.  Lots of air pockets in around the edge.  The cheese was awesome.  The sausage and meatballs had just great flavor but didn't overpower the entire pizza.  If I had to have a single complaint it would be the sauce.  I guess it may have been a little two watery or possibly a little too much sauce.  It was impossible to get a slice of pizza to your plate while keeping the toppings on the pizza.  That's why I didn't get a picture of just one single slice.  I never had one that looked good at all.  But man was it good.  I'll be back to try it again...
